I absolutely LOVE hummus. I can buy a pot and eat it all in one sitting, with pitta or vegetables or anything really. I love hummus with tomatoes, olives, lime, coriander… which all can be easily added to this simple and VERY easy recipe.
All you need is a blender or food processor, and it takes less than five minutes from when you open the first can of chickpeas.

2 generous tbsp lemon juice
2 peeled garlic cloves
2 tsp ground cumin
2 tsp paprika
4 tbsp water
pinch of salt
extra virgin olive oil to serve
1. Drain and rinse your canned chickpeas. Transfer to your blender and leave a small handfull for serving if you wish.
2. Add the lemon juice, garlic, cumin, paprika, water and salt, and blend until smooth (I left my hummus a little bit chunky, as i prefer this).
3. Transfer the hummus to a bowl/plate, sprikle with the handful of chickpeas you put to one side (if you did) and drizzle with olive oil.
Done. That’s it. It’s absolutely simple, and there’s no need to buy hummus ready-made ever again. Serve with toasted pitta, raw vegetable such as carrots or cucumber, breadsticks, or just have it on a slice of bread. Hummus goes with everything, and this recipe is amazing.
